  • 2 large eggs
  • 0.25 teaspoon garlic powder (optional)
  • 0.25 teaspoon Italian herbs (optional)
  • 2 tablespoons shredded cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking tray with parchment paper or a silicone mat.
  2. In a blender or food processor, combine the cottage cheese and eggs. Blend until completely smooth.
  3. If you’re adding spices or shredded cheese, mix them in with a quick pulse.
  4. Pour the batter onto the prepared tray, spreading it evenly to form a 1/4-inch thick layer.
  5. Place the tray in the oven and bake for 20-25 minutes or until the flatbread is golden brown and firm to the touch.
  6. Remove from the oven and let cool slightly before slicing.
