  • 1 cup all-purpose flour (or whole wheat/gluten-free flour)
  • 2 teaspoons baking powder
  • A pinch of salt (optional)
  • 1 cup cottage cheese (2% or 4%)
  • 1 large egg (optional, for egg wash)
  • 1 tablespoon everything seasoning (or preferred toppings)

Instructions

  1. In a medium bowl, mix the flour, baking powder, and optional salt thoroughly.
  2. Create a well in the center of the dry mixture and add the cottage cheese. Combine until a chunky dough forms.
  3. Transfer the dough to a well-floured surface and knead for 1-2 minutes until a semi-smooth ball forms.
  4. Divide the dough into four equal sections. Roll each section into a log about 6-7 inches long and ¾ inch thick, then connect the ends to create bagels.
  5. In a small bowl, whisk the egg with a splash of water and lightly brush the egg wash over each bagel. Add toppings if desired.
  6. Preheat the air fryer to 300°F and spray or line the basket with parchment paper.
  7. Arrange the bagels in the air fryer in a single layer. Cook for 15-17 minutes or until golden brown, checking at the 10-minute mark.
  8. Remove from the air fryer and allow to cool for at least 15 minutes before slicing and serving.
