A warm and cozy baked dish featuring creamy cottage cheese, tender apples, and rolled oats, perfect for breakfast or brunch.

  • 2 cups cottage cheese
  • 2 apples, peeled and diced
  • 1/2 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 3 eggs
  • 1/4 teaspoon salt
  • 1/4 cup chopped nuts (optional)
  • Raisins or dried cranberries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish with butter or nonstick spray.
  2. In a large bowl, add the cottage cheese, honey or maple syrup, vanilla extract, eggs, and salt. Mix until mostly smooth and evenly combined.
  3. Stir in the diced apples, rolled oats, and cinnamon until everything is distributed. If adding raisins, dried cranberries, or chopped nuts, fold them in now.
  4. Pour the mixture into your greased baking dish and smooth the top with a spatula.
  5. Bake for 30–35 minutes or until the center is set and the top is lightly golden.
  6. Let the bake cool slightly before slicing. Serve warm for the best texture and flavor.

Notes

Use room-temperature eggs for even mixing and consider adding a drizzle of honey or maple syrup on individual servings for extra sweetness.
