Warm, spiced muffins studded with tender apple chunks and topped with a crunchy oat-brown sugar streusel, perfect for breakfast or brunch.

  • 1 cup (125 g) all-purpose flour
  • 1/2 cup (120 g) pumpkin puree
  • 1/2 cup fresh apple, diced small (about 1 small apple)
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar (for batter)
  • 1/4 cup vegetable oil
  • 1 large egg, room temperature
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup rolled oats (for streusel)
  • 2 tablespoons butter, melted (for streusel)
  • 1/4 cup packed brown sugar (for streusel)
  • 2 tablespoons flour (for streusel)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a large bowl.
  3. Whisk pumpkin puree, granulated sugar, 1/4 cup brown sugar, oil, and egg in a separate bowl until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until combined.
  5. Fold in the diced apples until just distributed.
  6. Make the streusel by combining rolled oats, melted butter, 1/4 cup brown sugar, and flour; rub until crumbly.
  7. Divide the batter evenly among muffin cups and sprinkle with streusel.
  8. Bake for 18–20 minutes, testing with a toothpick.
  9. Cool muffins in the tin for 5 minutes, then transfer to a wire rack to cool.

Notes

For a lighter texture, swap half of the oil for unsweetened applesauce and adjust sugar. Use pumpkin pie spice instead of cinnamon and nutmeg if preferred.
