A high-protein, gluten-free banana bread bursting with flavor and energy, ideal for breakfast or a post-workout snack.

Ingredients

  • 3 ripe bananas
  • 1 cup oat flour
  • 1/2 cup peanut-butter protein powder
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mash the ripe bananas in a mixing bowl.
  3. Add the eggs, honey, and vanilla extract, and mix until well combined.
  4. Stir in the oat flour, peanut-butter protein powder, baking soda, and salt until just combined.
  5. Fold in any nuts, if using.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 45-50 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
