  • 1 cup almond flour
  • 2 scoops vanilla protein powder
  • 0.25 cup cream cheese (softened)
  • 0.25 cup Greek yogurt
  • 2 tablespoons honey or maple syrup
  • 0.5 cup fresh or frozen blueberries
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt

Instructions

  1. In a large mixing bowl, combine rolled oats, almond flour, and protein powder. Stir until evenly mixed.
  2. In a separate bowl, beat together the softened cream cheese, Greek yogurt, honey or maple syrup, vanilla extract, and salt until smooth.
  3. Gently fold in the blueberries, taking care not to crush them.
  4. Gradually incorporate the dry ingredients into the wet mixture, stirring until it forms a cohesive dough.
  5. Scoop out tablespoon-sized portions and roll them into bites.
  6. Place the bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
  7. Store in an airtight container in the fridge for up to one week, or freeze for longer shelf life.

Notes

For a vegan option, switch honey for maple syrup. You can also use oat flour instead of almond flour for a gluten-free version.
