  • 2 eggs
  • 1/4 cup maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 cup oat flour
  • 1/4 teaspoon baking powder
  • 1/2 cup fresh or frozen blueberries
  • 1 pinch salt
  • Butter or oil (for greasing)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a small baking dish.
  2. In a mixing bowl, whisk together the cottage cheese, eggs, maple syrup (or honey), vanilla extract, and cinnamon until smooth.
  3. Stir in the oat flour, baking powder, and a pinch of salt until everything is fully combined.
  4. Gently fold in the blueberries, being careful not to squish them.
  5. Pour the mixture into the greased baking dish, spreading it evenly.
  6. Bake for 30-35 minutes, or until the center is set and the top is golden brown.
