Bright, tangy buffalo chicken meets sweet, crisp bell pepper in this cozy weeknight dinner. Each pepper is filled with creamy, spicy shredded chicken, melty cheddar, and green onion.

Ingredients

  • 4 bell peppers
  • 2 cups shredded cooked chicken
  • 1/2 cup buffalo sauce
  • 1/2 cup cream cheese
  • 1 cup shredded cheddar cheese (divided)
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Extra buffalo sauce, ranch, or blue cheese dressing for serving (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a mixing bowl, combine shredded chicken, buffalo sauce, cream cheese, half of the cheddar cheese, and green onions. Season with salt and pepper.
  4. Fill each pepper with the chicken mixture, packing gently.
  5. Place the stuffed peppers upright in a baking dish and top with the remaining cheddar cheese. Cover the dish with foil.
  6. Bake covered for 25 minutes.
  7. Remove the foil and bake for an additional 10–15 minutes until the cheese is bubbly and the peppers are tender.

Notes

Garnish with extra green onions or a drizzle of buffalo sauce for presentation. Ideal for meal prep as the filling can be made ahead of time.
