A bright and savory salad combining earthy beets, creamy chickpeas, and salty feta with a lemon-olive oil dressing.

Ingredients

  • 2 medium beets, cooked and diced
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 100g feta cheese, crumbled
  • Fresh parsley for garnish

Instructions

  1. Prepare your ingredients: Drain and rinse the chickpeas, dice the cooked beets, and finely chop the red onion.
  2. Combine the base: In a large bowl, add the chickpeas, diced beets, and red onion. Toss gently.
