A hearty and flavorful Chipotle Chicken Bowl featuring smoky chipotle-spiced chicken, fluffy rice, and vibrant toppings.

  • 2 cups cooked rice (white or brown)
  • 1 lb chicken breast, diced
  • 1 tablespoon olive oil
  • 1 tablespoon chipotle powder
  • Salt and pepper to taste
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup cilantro, chopped
  • 1 lime, juiced

Instructions

  1. Marinate the chicken: In a bowl, combine olive oil, chipotle powder, salt, and pepper. Add the diced chicken and toss to coat evenly. Let it marinate for 15–30 minutes.
  2. Cook the chicken: Heat a skillet over medium heat. Add the marinated chicken in a single layer and cook, stirring occasionally, until fully cooked and browned, about 6–8 minutes.
  3. Prepare the base and toppings: If your rice isn’t already cooked, prepare it according to package instructions. Drain and rinse the black beans, halve the cherry tomatoes, slice the avocado, and chop cilantro.
  4. Assemble the bowls: In serving bowls, layer the cooked rice first, followed by black beans, corn, cooked chicken, cherry tomatoes, and avocado.
  5. Finish and serve: Drizzle lime juice over each bowl and top with chopped cilantro. Serve warm and enjoy.

Notes

Customize with more or less chipotle powder for your heat preference; serve with lime wedges for added brightness.
