A delightful blend of rich coffee flavor and creamy chia texture, perfect for breakfast or as a snack.

Ingredients

  • 0.5 cup brewed coffee (cooled)
  • 0.5 cup unsweetened almond milk (or milk of choice)
  • 0.25 cup chia seeds
  • 1-2 teaspoons maple syrup (to taste)
  • 0.5 teaspoon vanilla extract
  • 1 pinch cinnamon (optional)
  • 1 pinch sea salt

Instructions

  1. Brew your coffee as usual and allow it to cool to room temperature.
  2. In a jar or bowl, combine the cooled brewed coffee, almond milk, maple syrup, vanilla extract, sea salt, and cinnamon (if using). Stir until well combined.
  3. Add chia seeds and mix thoroughly to avoid clumps.
  4. Let the pudding sit for 10-15 minutes, then stir again.
  5. Cover and refrigerate for at least 4 hours or overnight.
  6. When ready to serve, stir again and add toppings like coconut cream or cocoa powder.

Notes

Store in an airtight container in the refrigerator for up to five days. Best served cold. If the pudding is too thick, stir in more almond milk before serving.
