A creamy and lighter version of traditional Alfredo sauce made with cottage cheese, perfect for weeknight meals.

  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Your favorite pasta (e.g., fettuccine or penne)
  • Parsley for garnish (optional)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook your pasta according to package instructions until al dente. Drain and set aside.
  2. Sauté the garlic: In a saucepan over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Blend the dairy: In a blender, combine the cottage cheese, heavy cream, and Parmesan cheese. Blend until smooth and creamy.
  4. Heat the sauce: Pour the blended mixture into the saucepan with the garlic. Cook over low heat, stirring occasionally, until heated through. Season with salt and pepper to taste.
  5. Toss with pasta: Toss the cooked pasta in the creamy sauce until well coated.
  6. Serve: Serve warm, garnished with chopped parsley if desired.

Notes

For a spicier version, add red pepper flakes. If the sauce is too thick, loosen it with reserved pasta cooking water.
