A quick and comforting flatbread made with just cottage cheese and flour, perfect for a weeknight dinner or as a snack.

  • 1 cup cottage cheese
  • 1 cup all-purpose flour
  • Optional: pinch of salt
  • Optional: 1–2 teaspoons olive oil (for the skillet)

Instructions

  1. Combine cottage cheese and flour in a medium bowl, adding salt if desired. Stir until a shaggy dough forms.
  2. Turn the dough onto a lightly floured surface and knead briefly until it holds together.
  3. Divide the dough into 6–8 equal portions; roll or press each into a round about 1/8–1/4 inch thick.
  4. Preheat a skillet over medium heat, adding oil if necessary.
  5. Cook each flatbread for about 2–3 minutes per side until golden and puffed.
  6. Transfer to a plate, covering with a towel to retain softness while cooking the rest.

Notes

If the dough feels too sticky, add flour a tablespoon at a time until manageable. For a chewier texture, substitute 1/4 cup of flour with whole-wheat flour.
