Cottage Cheese Flatbread

A quick and versatile skillet flatbread made with cottage cheese and eggs, perfect for wraps or pancakes.

  • 1 cup cottage cheese
  • 2 eggs
  • 1 cup all-purpose or whole-wheat flour
  • 1/2 teaspoon baking powder
  • Salt, to taste (start with 1/4 teaspoon)
  • Freshly ground black pepper, to taste
  • Olive oil or butter for cooking

Instructions

  1. In a mixing bowl, combine cottage cheese and eggs. Whisk until relatively smooth; small curds are okay.
  2. Add flour, baking powder, a pinch of salt, and pepper. Stir until just combined.
  3. Heat a non-stick skillet over medium heat. Add olive oil or butter and swirl to coat.
  4. Pour a ladleful of batter into the skillet and gently spread it into a round.
  5. Cook for about 3–4 minutes on the first side, until golden. Flip and cook another 2–3 minutes.
  6. Transfer to a plate and keep warm while you cook the remaining batter.
  7. Serve warm with your preferred toppings or fillings.
