Warm and tender flatbreads made with cottage cheese, gluten-free flour, and an egg, perfect for wraps or as a pizza base.

  • 1 cup cottage cheese
  • 1 cup gluten-free flour
  • 1 large egg
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • Water as needed

Instructions

  1. Combine cottage cheese, gluten-free flour, egg, salt, and baking powder in a mixing bowl.
  2. Stir until a rough dough forms.
  3. Check the dough’s texture, adding water one tablespoon at a time if it’s dry.
  4. Divide the dough into 6–8 equal pieces for small flatbreads or 3–4 for larger ones.
  5. Roll each piece into a disk about 1/8–1/4 inch thick.
  6. Heat a non-stick skillet over medium heat and add a tiny swipe of oil.
  7. Cook each flatbread for 2–3 minutes per side, until golden brown.
  8. Stack finished flatbreads on a plate covered with foil to keep warm.

Notes

For best texture, use full-fat cottage cheese and allow the dough to rest for 5–10 minutes before cooking.
