A quick and flexible flatbread made from cottage cheese and flour, perfect for wraps, pizzas, and more.

  • 1 cup (about 225 g) cottage cheese
  • 1 cup (about 120140 g) gluten-free flour blend or all-purpose flour
  • Pinch of salt (optional)
  • Oil or butter for the pan (optional)

Instructions

  1. Combine cottage cheese and flour in a medium bowl. Add salt if using.
  2. Stir with a fork until a shaggy dough forms; adjust flour as needed for texture.
  3. Preheat a skillet over medium heat, adding oil or butter for browning.
  4. Divide the dough into 4–6 portions and shape each into a round about 1/8–1/4 inch thick.
  5. Cook each flatbread for 2–3 minutes per side until golden brown.
  6. Wrap cooked flatbreads in a clean towel to keep warm while finishing the batch.

Notes

For gluten-free results, ensure flour blend contains xanthan gum or add a pinch if not. Add herbs or spices for extra flavor.
