A deliciously crispy take on a breakfast classic, these hash brown waffles are perfect for brunch or a cozy family dinner.

  • 2 large russet potatoes
  • 0.25 medium yellow onion
  • 2 tablespoons all-purpose flour
  • 1 large egg
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 2 tablespoons vegetable oil

Instructions

  1. Wash and peel the russet potatoes. Shred them into medium-sized shreds using a box grater or food processor.
  2. Place shredded potatoes in a clean towel and squeeze out excess moisture.
  3. Peel and finely grate the yellow onion.
  4. In a bowl, combine squeezed potatoes, grated onion, flour, egg, salt, pepper, and garlic powder. Mix well.
  5. Preheat waffle iron and grease with vegetable oil.
  6. Scoop about 1/2 cup of potato mixture into the waffle iron and spread evenly.
  7. Close the lid and cook for 5-7 minutes until golden brown and crispy.
  8. Remove waffles and place on a wire rack to maintain crispiness.
  9. Repeat with remaining mixture and serve immediately.

Notes

Make sure to squeeze out excess moisture from the potatoes for maximum crispiness.
