  • 2 large onions, thinly sliced
  • 3 tablespoons vegetable oil
  • 2 teaspoons turmeric powder
  • 1 teaspoon cumin seeds

  • Rice or flatbread for serving

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the sliced onions and sauté until they are golden and caramelized, stirring occasionally.
  3. Stir in the turmeric and cumin seeds, cooking for another minute to release their flavors.
  4. Carefully add the cubed potatoes, mixing to coat them with the spice-infused onions.
  5. Pour in enough water to cover the potatoes and season with salt and black pepper.
  6. Bring the mixture to a boil, then reduce the heat. Simmer until the potatoes are tender, about 20-25 minutes.
  7. Serve hot with rice or flatbread, garnished with fresh herbs if desired.
