A quick and delicious flatbread made with just cottage cheese and flour, perfect for any occasion.

  • 1 cup full-fat cottage cheese (strained if watery)
  • 1 cup all-purpose flour (or substitute with gluten-free flour or almond flour)

Instructions

  1. In a mixing bowl, combine the cottage cheese and flour.
  2. Mix until a soft dough forms.
  3. Transfer the dough onto a floured surface and knead for 2-3 minutes until smooth.
  4. Divide the dough into 2-3 equal pieces.
  5. Roll each piece into a circle about ¼-inch thick.
  6. Preheat a skillet over medium heat or set your oven to 450°F (230°C).
  7. Cook the flatbreads in the skillet for 2-3 minutes on each side until they turn golden brown. Alternatively, bake them for 6-8 minutes until slightly puffed.
  8. Optionally, brush with olive oil or melted butter and sprinkle with your favorite herbs or spices.
  9. Allow the flatbreads to cool slightly before serving or storing.

Notes

For best results, strain your cottage cheese if it’s watery and avoid over-kneading the dough.
