A creamy and nutritious coconut chia pudding recipe, perfect for a healthy breakfast or snack.

  • 0.33 cup shredded coconut (unsweetened)
  • 0.25 cup chia seeds
  • 2 tablespoons honey (or maple syrup for vegan option)
  • 0.5 cup Greek yogurt (plain, full-fat, or dairy-free yogurt for vegan option)
  • 1 teaspoon vanilla extract
  • 1 cup milk (dairy or plant-based)

Instructions

  1. In a large, airtight container, combine all the ingredients: rolled oats, shredded coconut, chia seeds, honey, Greek yogurt, vanilla extract, and milk.
  2. Mix well until everything is thoroughly combined.
  3. Cover the container and store it in the refrigerator for at least four hours or overnight.
  4. Before serving, give the pudding a good stir to redistribute the ingredients.
  5. Serve topped with additional Greek yogurt and a sprinkle of shredded coconut.

Notes

Leftovers can be stored in the refrigerator for up to five days. For a smoother texture, blend the ingredients before refrigerating.
