A customizable protein-packed granola that’s perfect for busy mornings or a quick snack anytime.

Ingredients

  • 2 cups old-fashioned rolled oats
  • 0.5 cup mixed nuts (roughly chopped)
  • 0.5 cup vanilla protein powder
  • 0.25 cup pepita seeds
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 0.25 cup coconut oil (melted)
  • 2 tablespoons honey (melted)
  • 1 tablespoon pure maple syrup
  • 2 large egg whites (lightly beaten)

Instructions

  1. Preheat your oven to 325°F and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, mixed nuts, protein powder, pepita seeds, and ground cinnamon.
  3. In another small bowl, whisk together the vanilla extract, melted coconut oil, honey, maple syrup, and egg whites until fully combined.
  4. Pour the wet mixture over the dry ingredients and stir well until everything is evenly coated.
  5. Spread and press the granola mixture onto the prepared baking sheet, ensuring the pieces are touching for chunky clusters.
  6. Bake for 10 minutes. Remove the sheet and flip the granola, breaking large chunks as preferred.
  7. Bake for an additional 15 minutes, or until it turns a light golden brown.
  8. Allow the granola to cool completely before breaking it apart and storing.

Notes

Store the granola in an airtight container for up to two weeks or freeze for up to three months.
