2 large eggs (separated)

Instructions
Whisk the egg whites in a clean bowl until soft peaks form.
In a separate bowl, mix together the Greek yogurt, oat flour, egg yolks, baking powder, salt, sweetener (if using), and vanilla (if desired) until just combined.
Gently fold the whipped egg whites into the batter.
Heat a non-stick pan over medium-low heat and scoop approximately ¼ cup of batter for each pancake.
Cook for 2-3 minutes until bubbles form, then flip and cook for another 1-2 minutes until golden brown.

Notes
