A high-protein sandwich bread made with Greek yogurt and applesauce for a fluffy, nutritious loaf that’s perfect for various meals.

Ingredients

  • 4 cups bread flour (480g)
  • 2 teaspoons instant yeast
  • 1 teaspoon salt
  • 1 cup fat-free Greek yogurt (240g, warm or at room temperature)
  • 2/3 cup unsweetened applesauce (8 oz)
  • 1-2 tablespoons water (as needed)
  • 1 tablespoon non-dairy milk (optional, for brushing)
  • 1 tablespoon maple syrup (optional, for brushing)

Instructions

  1. In the bowl of a stand mixer, combine the bread flour, instant yeast, and salt until well mixed.
  2. Add the warm Greek yogurt and applesauce to the dry ingredients.
  3. Start kneading on low speed for about 1 minute until combined. If the mixture seems dry, add 1 tablespoon of water.
  4. Continue kneading for 7-10 minutes, adjusting with additional water or flour until the dough pulls away from the bowl and forms a smooth, pliable ball.
  5. Transfer the dough to a lightly greased bowl, cover it, and let it rise in a warm place until doubled in size, around 60 to 90 minutes.
  6. Punch down the dough and move it to a floured surface. Divide it into 4 equal pieces.
  7. Roll each piece into a 6 x 9 inch rectangle, fold into thirds, and roll tightly into cylinders.
  8. Place the rolled dough into a well-oiled bread pan and let rise for another 40 to 60 minutes or until puffy.
  9. Preheat your oven to 350°F (180°C).
  10. Brush the tops with a milk-maple syrup mixture.
  11. Bake in the preheated oven for 15 minutes, then cover with aluminum foil, and bake for an additional 15 minutes or until the internal temperature reaches 190°F.
  12. Once baked, remove from the oven and let cool on a rack before slicing.

Notes

For best results, use a stand mixer and allow proper rising time. Consider different flavors of applesauce for variation.
