Light and fluffy loaves infused with blueberries, perfect for a nutritious breakfast or a light snack.

Ingredients

  • 4 large eggs, separated
  • 0.5 cup cottage cheese (silken tofu for dairy-free option)
  • 2 tablespoons powdered sweetener (optional)
  • 0.25 teaspoon cream of tartar
  • 0.5 teaspoon vanilla extract
  • 0.25 cup fresh blueberries (or substitute with raspberries or chopped strawberries)

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a clean bowl, beat the egg whites and cream of tartar until stiff peaks form.
  3. In another bowl, mix the egg yolks, cottage cheese, sweetener, and vanilla extract until smooth.
  4. Carefully fold the egg white mixture into the yolk mixture, ensuring you don’t deflate the whites.
  5. Gently fold in the blueberries.
  6. Spoon the batter onto the prepared baking sheet, making six even rounds.
  7. Bake for 25–30 minutes, or until golden and firm to the touch.
  8. Allow to cool slightly before serving.

Notes

Serve warm with Greek yogurt or honey. Keep in the fridge for up to 3 days or freeze for up to a month.
