  • 2 large eggs
  • 1½ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a loaf pan by greasing it or lining it with parchment paper.
  2. In a large bowl, whisk together the cottage cheese, eggs, and salt until smooth and creamy.
  3. In another bowl, combine the flour and baking powder, mixing well.
  4. Gradually incorporate the dry mixture into the wet ingredients, stirring gently until just combined. Be careful not to overmix; a little lumpiness is okay!
  5. Pour the batter into the prepared loaf pan and smooth out the top.
  6. Bake for 45-50 minutes or until the bread is golden brown and a toothpick inserted into the center comes out clean.
