A light and fluffy protein-packed bread that’s gluten-free and versatile for meals or snacks.

Ingredients

  • 1 cup cottage cheese
  • 3 large eggs
  • 1.5 tablespoons coconut flour (or almond flour)
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon garlic powder (optional)
  • 1 tablespoon fresh herbs (optional, such as parsley or chives)

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk the eggs until fluffy and pale.
  3. Add the cottage cheese, coconut flour, baking powder, salt, and garlic powder (if using) to the eggs and mix until smooth.
  4. Spoon the mixture onto the prepared baking sheet, forming 6-8 mounds.
  5. Bake in the preheated oven for 25-30 minutes, or until tops are golden brown and firm to the touch.
  6. Allow to cool slightly before serving.

Notes

Ensure eggs are at room temperature for optimal fluffiness. Don’t overmix the batter; small lumps are fine.
