A comforting one-pan dish featuring juicy chicken breasts and golden roasted potatoes, topped with melted cheese and garlic.

  • 4 chicken breasts
  • 4 potatoes, diced
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the diced potatoes and minced garlic in a large baking dish, drizzle with olive oil, and season with salt and pepper.
  3. Lay the chicken breasts on top of the potatoes and season them with additional salt and pepper.
  4. Sprinkle the shredded cheese evenly over the chicken.
  5. Bake for 25–30 minutes or until the chicken is cooked through and the potatoes are tender.
  6. Garnish with fresh parsley and serve hot.

Notes

Let chicken sit at room temperature for 10–15 minutes before baking for even cooking. For best results, cut potatoes into uniform dice.
