Ingredients

Scale
  • 3 ripe bananas
  • 1 cup Greek yogurt (about 8 oz)
  • 1/2 cup sugar
  • 1/4 cup honey
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mash the 3 ripe bananas until mostly smooth with a few lumps remaining.
  3. Add 1 cup Greek yogurt, 1/2 cup sugar, 1/4 cup honey, 2 eggs, and 1 tsp vanilla extract to the mashed bananas; mix until smooth.
  4. Whisk together 1 1/2 cups all-purpose flour, 1 tsp baking soda, and 1/2 tsp salt in another bowl.
  5. Gradually add the dry ingredients to the wet banana mixture, stirring until just combined.
  6. Fold in 1/2 cup chopped nuts if using, and pour the batter into the prepared loaf pan.
  7. Bake for 50–60 minutes, or until a toothpick inserted comes out clean.
  8. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use very ripe bananas for best results; the loaf freezes well and can be made ahead of time.
