A moist and tender banana bread enriched with Greek yogurt for a delightful breakfast or snack.

Ingredients

  • 2 ripe bananas, mashed
  • 1 cup Greek yogurt
  • 1/2 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup walnuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mix together the mashed bananas, Greek yogurt, sugar, eggs, and vanilla extract until well combined.
  3. Whisk together the flour, baking soda, salt, and cinnamon (if using) in another bowl.
  4. Add the dry ingredients to the wet mixture, stirring until just combined. Fold in walnuts or chocolate chips if using.
  5. Pour the batter into the prepared loaf pan and smooth the top. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
  6. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use ripe bananas for sweeter flavor. Allow loaf to cool completely for neat slices.
