Fluffy and rich Greek yogurt pancakes that bring a fresh twist to your breakfast routine.

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 tablespoon granulated sugar (optional)
  • 0.75 cup Greek yogurt (plain or flavored)
  • 0.25 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter or oil (for greasing the pan)

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and sugar (if using).
  2. In a separate bowl, mix the Greek yogurt, milk, eggs, and vanilla extract until smooth.
  3. Gradually add the dry ingredients into the wet mixture, stirring gently until just combined.
  4. Heat a non-stick skillet over medium heat and grease with butter or oil.
  5. Scoop about ¼ cup of batter onto the skillet for each pancake, spreading gently if needed.
  6. Cook for 2-3 minutes until bubbles form, then flip and cook for another 1-2 minutes until golden brown.
  7. Transfer pancakes to a plate and serve warm with your favorite toppings.

Notes

For added flavor, consider mixing in cinnamon or swapping the all-purpose flour with whole wheat flour.
