  • 2 teaspoons baking powder
  • 0.25 teaspoon salt
  • 1 cup Greek yogurt (2% plain recommended)
  • 0.25 cup milk (or water for a lighter batter)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter (or oil for a dairy-free option)

Instructions

  1. In a small bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a medium bowl, whisk the Greek yogurt, milk, eggs, vanilla, and melted butter until smooth.
  3. Gently combine the dry ingredients into the wet mixture, stirring until just mixed.
  4. Heat a large nonstick pan over medium heat for about 60-90 seconds, lightly greasing it with butter or oil.
  5. Pour ¼ cup of pancake batter onto the hot pan and cook for about 2 minutes or until edges appear dry and bubbles form on top.
  6. Carefully flip the pancake and cook for another 1-2 minutes until golden brown.
  7. Repeat with the remaining batter, greasing the pan as needed.

Notes
