A warm bowl featuring savory ground beef, roasted sweet potatoes, and a drizzle of hot honey, perfect for a comforting weeknight dinner.

  • 1 lb lean ground beef (93% preferred)
  • 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
  • 1 large avocado, sliced just before serving
  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 yellow onion, diced
  • 2 tbsp olive oil, divided
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 2 tbsp hot honey (adjust for heat level)
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon (optional)
  • Salt and black pepper, to taste
  • Parchment paper for easy cleanup

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment.
  2. Toss the diced sweet potatoes with 1 tablespoon olive oil, paprika, garlic powder, cinnamon, salt, and pepper until evenly coated. Spread in a single layer on the prepared sheet.
  3. Roast for 40–45 minutes, stirring once halfway through, until fork-tender and edges are nicely caramelized.
  4. While potatoes roast, heat the remaining tablespoon olive oil in a large skillet over medium-high heat. Add the diced onion and cook 5–6 minutes, stirring occasionally, until softened and translucent.
  5. Add the ground beef to the skillet, breaking it into bite-sized pieces with a wooden spoon. Cook 6–8 minutes until no pink remains and the internal temperature reaches 160°F. Drain any excess fat.
  6. Stir in the taco seasoning and cook 1–2 minutes more until fragrant. Taste and adjust salt and pepper.
  7. To assemble: divide warm roasted sweet potatoes into bowls, top with a portion of seasoned ground beef, sliced avocado, and a scoop of cottage cheese. Drizzle hot honey over each bowl to taste and serve immediately.

Notes

Feel free to adjust the heat level by using more or less hot honey. For meal prep, store components separately and assemble just before serving.
