A delicious and nutritious bowl featuring lean ground beef, roasted sweet potatoes, creamy cottage cheese, and a drizzle of hot honey.

  • 1 lb lean ground beef (93% preferred)
  • 2 medium sweet potatoes (peeled and diced)
  • 1 whole avocado (sliced)
  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 medium yellow onion (diced)
  • 2 tbsp olive oil
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 2 tbsp hot honey (store-bought or homemade)
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 400°F.
  2. In a bowl, toss the diced sweet potatoes with 1 tbsp olive oil, paprika, garlic powder, cinnamon, salt, and pepper to taste.
  3. Spread the seasoned sweet potatoes on a baking sheet and roast for 40–45 minutes, stirring halfway through for even cooking.
  4. While the sweet potatoes are roasting, heat the remaining olive oil in a large skillet over medium heat.
  5. Add the diced onion and sauté until softened, about 5–7 minutes.
  6. Incorporate the ground beef into the skillet, seasoning it with taco seasoning. Cook until browned and fragrant, breaking up the meat as it cooks. Add a splash of water and let it simmer until thickened.
  7. In bowls, layer the roasted sweet potatoes, seasoned beef, sliced avocado, and cottage cheese.
  8. Drizzle hot honey over the top and garnish with optional toppings like chopped cilantro, red pepper flakes, or a lime wedge.
