A savory and cheesy ground chicken taco casserole layered with tortilla chips and topped with melted cheese, perfect for weeknight dinners or potlucks.

  • 1 pound ground chicken
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 1 cup salsa
  • Tortilla chips or tortillas, for layering
  • 1 cup shredded cheese
  • Chopped cilantro, for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Open and drain the black beans and corn.
  2. Cook the ground chicken in a large skillet over medium heat until browned.
  3. Add the rinsed black beans, drained corn, taco seasoning, and salsa. Cook for about 5 minutes.
  4. Layer tortilla chips or tortillas in a baking dish, then spoon the chicken mixture over them.
  5. Top with shredded cheese and bake for 20 minutes or until bubbly.
  6. Garnish with chopped cilantro and serve warm.

Notes

Customize the heat level by using mild or hot salsa and taco seasoning. Great for leftovers and meal prep.
