1 cup cottage cheese (225 grams, or substitute with mashed feta cheese)
2 medium eggs (room temperature)
1 cup oat flour (90-100 grams, or whole wheat flour)
1 teaspoon baking powder
0.25 teaspoon baking soda
2 tablespoons dairy or plant-based milk
2 teaspoons raw unsweetened honey (or maple syrup)
1 teaspoon pure vanilla extract (optional)
Olive oil, butter, or lard (for cooking)
Instructions
In a large bowl, combine cottage cheese, whisked eggs, honey, baking powder, baking soda, vanilla extract (if using), and a pinch of salt. Mix until smooth.
Gradually add oat flour, stirring to combine. Adjust thickness with milk if needed.
Preheat a skillet over low to medium heat and add olive oil or butter.
Scoop batter using a tablespoon and transfer to skillet. Cook until bubbles form on surface.
Flip pancakes and cook until golden brown on the other side.
Remove from skillet and place on a paper towel to absorb excess oil. Serve warm.
