A comforting one-pan skillet dinner featuring ground turkey, bell peppers, rice or quinoa, and melted cheese.

Ingredients

Scale
  • 1 pound ground turkey
  • 4 bell peppers, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 cup cooked rice or quinoa
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil (for sautéing)
  • 1 cup shredded cheese (cheddar or mozzarella)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic and cook until softened and fragrant (about 3–4 minutes).
  2. Add the ground turkey to the skillet and break it up with a spatula. Season with salt, pepper, and Italian seasoning. Cook until the turkey is browned and no longer pink.
  3. Stir in the diced bell peppers and cook until they begin to soften (about 4–6 minutes).
  4. Pour in the can of diced tomatoes (with juices) and the cooked rice or quinoa. Stir to combine and allow to heat through for 2–3 minutes.
  5. Sprinkle the shredded cheese evenly over the skillet mixture. Cover the pan and let sit until the cheese melts (about 2–4 minutes).
  6. Remove the skillet from heat. Serve hot straight from the pan or spoon onto plates.

Notes

For a spicy version, add red pepper flakes or a diced jalapeño with the onions. You can also use quinoa for a lighter version to boost protein and reduce calories.
