These High Protein Egg Bites are creamy, tender, and packed with protein, perfect for breakfast or a quick snack.

Ingredients

  • 6 large eggs
  • 1 cup cottage cheese (240 ml)
  • 1 cup chopped spinach (about 30 g)
  • 1/2 cup shredded cheese (cheddar or your choice) (about 56 g)
  • Salt and pepper to taste
  • Optional: Diced bell peppers, onions, or other vegetables

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin lightly with oil or nonstick spray.
  2. Whisk together the eggs and cottage cheese until mostly smooth and slightly frothy.
  3. Fold in the chopped spinach, shredded cheese, and any optional veggies. Season with salt and pepper.
  4. Fill the muffin tins, filling each cup about 2/3 full.
  5. Bake for 18–20 minutes until set and lightly golden. A toothpick should come out clean.
  6. Cool for a few minutes, then remove from the tin.
  7. Enjoy warm or store in an airtight container.

Notes

These egg bites are versatile and can be mixed with leftover vegetables. They can be frozen for longer storage.
