A cozy one-pan dinner featuring tender chicken coated in sticky-sweet honey BBQ sauce, served on a bed of fluffy rice.

  • 2 chicken breasts
  • 1 cup rice
  • 1 cup chicken broth
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 cup honey
  • 1/2 cup BBQ sauce
  • Optional: diced bell peppers or onions

Instructions

  1. Season the chicken breasts evenly with salt and pepper.
  2. Heat a large pan over medium heat; add the chicken and brown on both sides until golden.
  3. In a bowl, whisk together honey and BBQ sauce until smooth.
  4. Pour the honey-BBQ mixture over the browned chicken in the pan, coating each piece.
  5. Add rice to the pan, then pour in chicken broth. Bring the mixture to a boil.
  6. Reduce heat to low to achieve a simmer, cover the pan, and cook for about 20–25 minutes.
  7. If using vegetables, add them during the last 10 minutes of cooking so they stay slightly crisp-tender.
  8. Let the pan sit off the heat for a minute before serving.

Notes

For a spicy kick, add cayenne to the BBQ mix. Use low-sugar BBQ for a healthier option.
