Soft, chocolatey cookies studded with chips and crowned with mini marshmallows, delivering a warm cup of cocoa flavor in every bite.

  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (113 g) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips
  • 1/2 cup mini marshmallows

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Whisk together the flour, cocoa powder, baking soda, and salt in a medium bowl until evenly combined.
  3. Cream the softened butter with granulated and brown sugars in a separate large bowl until light and fluffy.
  4. Beat in the egg and then the vanilla extract, scraping the bowl as needed.
  5. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  6. Fold in the chocolate chips evenly through the dough.
  7. Portion dough onto the prepared sheet about 2 inches apart.
  8. Top each dough ball with a few mini marshmallows, pressing gently to adhere.
  9. Bake for 10–12 minutes, until edges are set but centers look slightly soft.
  10. Cool on the sheet for 3–5 minutes before transferring to a wire rack.

Notes

For even baking, rotate the pan halfway through. Store cooled cookies in an airtight container for up to 3 days.
