A comforting, low-carb lasagna made with layers of zucchini, seasoned meat, creamy ricotta, and melty mozzarella.

Ingredients

  • 3 large zucchinis, sliced
  • 1 pound ground beef or turkey
  • 2 cups marinara sauce (sugar-free if preferred)
  • 1 cup ricotta cheese
  • 1 egg
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups shredded mozzarella cheese
  • Olive oil for cooking

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
  2. Cook the ground beef or turkey in a pan with olive oil over medium heat until browned. Drain excess fat and season with salt and pepper.
  3. Mix ricotta cheese, egg, Italian seasoning, salt, and pepper until smooth and combined.
  4. Layer marinara sauce, zucchini slices, ricotta mixture, and cooked meat in the baking dish, repeating layers and finishing with sauce on top.
  5. Add mozzarella cheese on top, cover with foil and bake for 25 minutes, then uncover and bake for an additional 15 minutes.
  6. Let cool for 5–10 minutes before slicing and serving warm.

Notes

Use ground turkey for a leaner option. Let the dish rest to avoid a soupy center when slicing.
