A hearty, layered dish featuring roasted potatoes, seasoned ground meat, and fresh toppings, perfect for a comforting meal.

Ingredients

  • 4 large potatoes
  • Olive oil
  • Salt and pepper to taste
  • 1 lb ground beef or turkey
  • 1 tsp taco seasoning
  • 1 cup black beans, drained
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 425°F (220°C). Wash and dice the potatoes into 1-inch cubes, then toss with olive oil, salt, and pepper. Spread them on a baking sheet.
  2. Place the baking sheet in the oven and roast for 25–30 minutes, turning halfway through, until golden and crispy.
  3. Heat a skillet over medium heat. Add the ground meat and brown it while breaking it into small pieces. Drain excess fat and stir in taco seasoning.
  4. In a large bowl, layer the roasted potatoes first, then add the seasoned meat, followed by black beans, corn, diced tomatoes, and diced avocado.
  5. Top each bowl with shredded cheese and sour cream, garnishing with fresh cilantro. Serve immediately.

Notes

Customize with dairy-free cheese for a vegan option. Be mindful of overcooking the meat to maintain moisture.
