Delicious crispy broccoli cheese rounds that are a healthy, low-carb snack perfect for any occasion.

  • 2 cups fresh broccoli florets (finely chopped)
  • 1 cup shredded cheddar cheese
  • 4 oz cream cheese (softened)
  • 0.5 cup almond flour (or coconut flour for nut-free)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 large eggs
  • Pinch of salt and pepper (to taste)
  • 2 tablespoons olive oil (for frying or drizzling)
  • 2 tablespoons grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) if baking, or heat olive oil in a pan over medium heat if frying.
  2. Wash and finely chop the broccoli florets. Steam them for about 5 minutes until tender, then drain well and let cool slightly.
  3. In a large mixing bowl, combine steamed broccoli, shredded cheddar cheese, softened cream cheese, garlic powder, onion powder, salt, and pepper.
  4. Add almond flour to the mixture and combine well.
  5. Beat the eggs in a separate bowl and fold into the mixture until fully incorporated.
  6. Shape the mixture into small round patties, about 1-2 inches wide and ½ inch thick.
  7. If baking: Place patties on a parchment-lined baking sheet, drizzle with olive oil, and sprinkle with Parmesan if desired. Bake for 20-25 minutes, flipping halfway through.
  8. If frying: Cook patties in hot oil for 2-3 minutes per side or until golden brown and crispy.
  9. Let fried patties cool on paper towels to remove excess oil.
  10. Serve warm with your favorite dipping sauces.
