A quick and vibrant flat bread pizza topped with fresh mozzarella, ripe tomatoes, and basil, perfect for a weeknight dinner or casual gathering.

Ingredients

  • Flat bread (store-bought) or pizza dough
  • Fresh mozzarella cheese, sliced (about 6–8 oz)
  • Tomatoes, thinly sliced (Roma or vine-ripened)
  • Fresh basil leaves
  • Olive oil
  • Salt
  • Freshly cracked black pepper

Instructions

  1. Preheat the oven to the temperature recommended on the flat bread package, or to 475°F (245°C) if using pizza dough.
  2. Place a baking sheet or pizza stone inside while the oven heats.
  3. Arrange the flat bread on a baking sheet or stretch your dough on a lightly floured surface.
  4. Drizzle olive oil over the surface of the flat bread and spread it.
  5. Layer overlapping slices of fresh mozzarella evenly across the base and top with tomato slices.
  6. Season lightly with salt and black pepper.
  7. Bake for 10–15 minutes, until cheese melts and crust edges become golden.
  8. Remove from the oven and scatter fresh basil leaves on top.
  9. Slice and serve hot.

Notes

For a crisper base, preheat the baking sheet or pizza stone. Store leftovers in an airtight container for up to 3 days.
