Delicious, energy-boosting protein balls made with almond butter, peppermint, and dark chocolate.

Ingredients

  • 0.5 cup rolled oats (50g)
  • 1 cup almond butter (240g, room temperature)
  • 2 tablespoons honey (42g)
  • 0.25 cup vanilla protein powder (30g)
  • 0.25 teaspoon peppermint extract (adjust to taste)
  • 0.25 cup mini dark chocolate chips (40g)
  • 1-2 tablespoons unsweetened almond milk (if needed for consistency)

Instructions

  1. In a large mixing bowl, combine the rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract.
  2. Mix thoroughly. If the mixture feels too dry, add 1 tablespoon of almond milk at a time until you reach the desired consistency.
  3. Gently fold in the mini dark chocolate chips until they are evenly distributed throughout the mixture.
  4. Scoop out tablespoon-sized portions and roll them into balls using your hands.
  5. Place the protein balls on a baking sheet lined with parchment paper.
  6. Refrigerate for at least 20 minutes to firm them up before serving.

Notes

Store in an airtight container in the refrigerator for up to a week. Can be frozen for up to 3 months.
