Delicious no-bake bites of pecan pie flavor with a chocolaty twist, perfect for any occasion.

  • 1 cup pecans, finely chopped (toasted for extra flavor)
  • 1 cup graham cracker crumbs (sub: digestive biscuits or gluten-free crackers)
  • 1/2 cup powdered sugar (confectioners’ sugar)
  • 1/2 cup chocolate chips (semi-sweet or mini chips)
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup maple syrup or honey (maple is slightly more pie-like)
  • 1 teaspoon vanilla extract
  • 1/4 cup chocolate for coating (optional; use dark, milk, or dairy-free chips)

Instructions

  1. Combine dry and wet: In a large bowl, mix the finely chopped pecans, graham cracker crumbs, powdered sugar, chocolate chips, and cocoa powder. Add the maple syrup (or honey) and vanilla. Stir until everything is evenly moistened and sticks together when pressed.
  2. Form balls: Use a teaspoon or small cookie scoop to portion about 1 tablespoon of mixture (roughly 1 inch in diameter). Roll between your palms to form smooth balls. If mixture is too sticky, chill 10 minutes or dust hands with a little graham crumb.
  3. Optional chocolate coating: Melt the coating chocolate gently in a microwave in 20-second bursts, stirring between, or use a double boiler. Dip each ball with a fork, tap to remove excess, and place on parchment.
  4. Chill to set: Put the rolled or coated balls on a parchment-lined tray and refrigerate about 15 minutes until firm.
  5. Serve or store: Serve chilled or at room temperature. Keep extras in an airtight container in the fridge.

Notes

For a nut-free version, substitute pecans with toasted sunflower seeds or crushed pretzels.
