A quick, fudgy brownie made in just one minute, perfect for a healthy dessert or snack.

Ingredients

  • 1/4 cup canned pumpkin (60g)
  • 1/2 scoop vanilla protein powder (16g)
  • 1 tablespoon unsweetened dark cocoa powder (5g)
  • 1-2 teaspoons granulated sugar substitute (optional, to taste)

Instructions

  1. In a microwave-safe bowl or mug, mix together the protein powder, cocoa powder, and sugar substitute (if using).
  2. Add the canned pumpkin to the dry ingredients and stir until well blended into a smooth batter.
  3. If preferred, transfer the batter to a second mug sprayed with nonstick cooking spray for easy serving.
  4. Microwave for 1 to 1.5 minutes, watching carefully to prevent overflow.
  5. Allow the brownie to cool for about 30 seconds before indulging.
