  • 1 cup cooked sausage, crumbled
  • 4 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Oil for frying (neutral oil like canola, vegetable, or light olive oil)

Instructions

  1. Prep the potatoes and sausage: Grate the 2 large potatoes and squeeze out excess moisture using a clean kitchen towel. Have 1 cup cooked sausage crumbled and whisk 4 large eggs in a bowl with salt and pepper.
  2. Heat the skillet: Heat oil in a large skillet over medium heat until shimmering.
  3. Add the squeezed grated potatoes to the skillet, press down firmly to form an even layer. Cook until the bottom is golden brown, about 5–7 minutes.
  4. Flip the potato layer carefully and cook the other side until golden and crispy.
  5. In a separate bowl, whisk the eggs and stir in the crumbled sausage, salt, and pepper. Pour the egg mixture evenly over the cooked hash browns.
  6. Sprinkle 1 cup shredded cheese on top and cover the skillet until the eggs are set and the cheese is melted, about 2–4 minutes on low heat.
  7. Slide or cut into portions and serve hot.

Notes

Use well-drained grated potatoes for optimal crispiness. Preheat the oil and press the potatoes firmly for the best results.
