  • 0.67 cup cottage cheese
  • 1 tablespoon avocado oil
  • 1 tablespoon chives (finely chopped)
  • Everything seasoning (to taste)
  • Sea salt (to taste)
  • Ground black pepper (to taste)

Instructions

  1. In a large bowl, gently whisk the eggs until combined.
  2. Add in the cottage cheese and chives, whisk again until combined.
  3. Heat the avocado oil in a large frying pan over medium heat.
  4. Pour in the egg mixture and let it sit undisturbed for about 30 seconds.
  5. Carefully lift and fold the eggs with a spatula, then allow it to rest for another 30 seconds.
  6. Repeat gently folding and resting until the eggs are just cooked through and creamy.
  7. Serve warm, topping with sea salt, black pepper, or everything seasoning to taste.

Notes
