A creamy, savory spinach stuffed chicken breast with a crispy exterior and a velvety garlic filling, perfect for weeknights or entertaining guests.

  • 2 chicken breasts
  • Salt and pepper to taste
  • 1 cup fresh spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup mozzarella cheese, shredded
  • 1 clove garlic, minced
  • Olive oil

Instructions

  1. Prep the filling by mixing together the chopped spinach, cream cheese, mozzarella, minced garlic, salt, and pepper in a bowl until fairly smooth.
  2. Create the chicken pockets by patting the chicken breasts dry and cutting a horizontal pocket into each breast. Season with salt and pepper.
  3. Stuff the breasts by spooning the spinach mixture into each pocket, using toothpicks to hold the opening if needed.
  4. Sear the chicken in a skillet with olive oil over medium heat for 2–3 minutes on each side until golden brown.
  5. Bake the seared chicken in a preheated oven at 375°F (190°C) for 25–30 minutes until cooked through.
  6. Rest the chicken for a few minutes before slicing or serving.

Notes

Use room temperature cream cheese for a smoother filling. Resting the chicken helps retain juiciness.
