Satisfy your sweet tooth with these protein-packed Brownie Protein Bites, perfect for a snack or guilt-free dessert.

Ingredients

  • 1 cup Medjool dates (about 13, pitted and soaked)
  • 1/3 cup sunflower seed butter (or any nut/seed butter)
  • 1 tsp vanilla extract
  • 1/3 cup hemp protein powder (or pumpkin, pea, or watermelon seed protein)
  • 1/4 cup cocoa powder (preferably Dutch-processed)
  • A pinch of salt
  • 1/2 cup dark chocolate (optional, for coating)
  • 1/2 tsp coconut oil (for melting with the chocolate)

Instructions

  1. Soak the dates: Remove the pits from the Medjool dates and soak them in hot water for about 5 minutes.
  2. Blend the base: In a food processor, combine the softened dates, sunflower seed butter, and vanilla extract until smooth.
  3. Mix in dry ingredients: Add the hemp protein powder, cocoa powder, and salt. Blend until well combined.
  4. Shape the bites: Scoop out the mixture and roll into bite-sized balls. Place on a lined baking sheet.
  5. Freeze: Place the baking sheet in the freezer for about 30 minutes to set the bites.
  6. Chocolate coating (optional): Melt the dark chocolate and coconut oil. Dip each chilled bite into the melted chocolate and return to the lined sheet.

Notes

Store in an airtight container in the refrigerator for up to a week or freeze for up to three months. Use parchment paper between layers to prevent sticking.
